This very fine Sparkling Shiraz was inspired in recognition of the effervescent nature of Nolleen, partner and wife of Pgil, winemaker / sommelier at Horndale Cellars. The Shiraz Fruit was picked when the Baume was at 15c, giving best balance of sugars. Matured in French Oak Barrique achieving full flavour and tanning Balance.
